A traditional mix of salt, spices (coriander & pepper), sugar and bicarbonate of soda.
Hint - do not add vinegar to the mix, it will neutralise the bicarbonate of soda.
Additional Information
To assist in preventing mold, wash the biltong down with a diluted solution of brown vinegar before hanging to dry.
Store spices in a sealed container in a cool place
